Some more yummy plant-based dinner ideas for our family’s meatless January! 🙂 We’re focusing on fruits, veggies, nuts, seeds, beans, legumes. And eating a little organic cheese too.

Here are the winter plant-based dinners we’re planning this week:
Monday: Vegan Gyoza Creamy Coconut Curry from Fueled Naturally. A friend said this dinner was a winner and it looks delicious. I can’t wait to try it.

Tuesday: Lentil Tacos from Tone It Up with Cilantro Rice. This recipe is part of the Tone It Up #TIU2021 challenge, which includes a ton of delicious and healthy recipes in their app. I love lentils and am excited to try them in tacos.

Wednesday: Fajita Sweet Potato Black Bean Burrito Bowls. Burrito bowls are such an easy dinner and kid-friendly too. We’ll roast cubed sweet potatoes with cumin and chili powder, warm up a can of black beans with oregano and garlic salt and cook up some bell peppers and onions. We’ll add all of that to a bowl with leftover cilantro rice from Tuesday, plus some greens, and topped with radish sprouts, avocado & tomatoes. YUM.
Thursday: Leftovers!
Friday: Tzaztiki Veggie Wrap from Sculpted Kitchen/ @plant_basedrecipe. Dill and potatoes are always such a delicious combo, and I love that this is packed with so many veggies. Can’t wait to try it!

Saturday: Takeout or leftovers. TBD.
Sunday: Roasted Veggies + Pesto Pasta. Such an easy, simple, healthy and delicious dinner. I love roasting broccoli and cauliflower and tomatoes.
