
Alex got a new toy: a kamado grill that we can use to grill and smoke foods and make pizzas! So a lot of our dinners this week will involve using it. 🙂 I hope these healthy dinners give you some ideas for your kitchen.
Here’s what’s for dinners this week:
Black Bean Burgers from Happy Herbivore, smoked sweet potatoes and a Caesar salad. I slice the sweet potatoes into thicker fry size and rub some olive oil and salt onto them, then smoking them until they’re tender. These are so good dipped into Chipotle Bitchin’ Sauce.

Grilled Salmon and Veggies with Coconut Jasmine Rice. I’m going to create a maple syrup tamari marinade for the salmon and grill veggies like zucchini and squash from our garden. I’m also going to try this Coconut Lime Jasmine Rice recipe from Boulder Locavore but cook in water instead of broth.

Pesto Pasta with Broccoli & Zucchini. Such an easy and healthy dinner. I like using Trader Joe’s Organic Brown Rice & Quinoa Fusilli Pasta. I loosely follow this recipe from Real Simple.

Grilled Pizzas. We tried out pizzas on our kamado the other night and once Alex got the timing right, they were delicious. I like using Trader Joe’s pre-made pizza dough or Trader Joe’s cauliflower crust. Some of my favorite topping combos are: pesto, broccoli, zucchini, spinach, tomatoes and a sprinkle of goat cheese; tomato sauce, mushrooms, black olives, green bell pepper, zucchini and mozzarella; tomato sauce, sun-dried tomatoes, artichoke hearts, black olives and either goat cheese or mozzarella.

Kale Caesar Salad from Oh She Glows with Smoked Chicken from Our Zest Life. This salad is so good, and the vegan dressing tastes like the real thing. We also tried this chicken recipe last week and it was so good. It will be on repeat this summer.
