I made this bread the other day and it was gone within 24 hours. It was so good. Moist and not overly banana-y or too sweet and the crumble was perfect. We will be making this again next time we have 2 spotted bananas π π
It made the house smell delicious and was a perfect snack or treat. I also made it healthier by using Greek yogurt instead of sour cream or buttermilk, and brown sugar.

Banana Bread with Peanut Butter Brown Sugar Crumble
The bread:
- 1/2 cup brown sugar
- 1/2 cup organic granulated sugar
- 1/2 cup butter at room temperature (I love using Kerrygold butter)
- 1 egg
- 1 teaspoon vanilla
- 2 over-ripened bananas
- 1/2 cup plain Greek yogurt
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 cups unbleached all-purpose flour
First, preheat your oven to 350 degrees.
While the oven is heating, mix together the sugars & butter until itβs creamy, then add the egg & vanilla. Mix it up and then add the bananas & yogurt. Once all of that is creamed together, add the rest of the dry ingredients.
Pour the batter into a greased & floured bread pan.
The crumble:
- 2 tablespoons peanut butter
- 1/2 cup brown sugar
- 1/4 cup unbleached all purpose flour
- Sprinkle of cinnamon
- Pinch of salt
Mix everything together until itβs crumbly. You might have to get messy and use your hands (or ask your kids to do it!).
Sprinkle it on top of the bread batter and bake for 50-60 mins until itβs baked through. (60 mins was perfect for me).
Let it cool, slice & enjoy!
