Roasted cauliflower is one of my all-time favorite veggie side dishes. It’s so delicious and goes well with really any dinner. I love serving this alongside spaghetti, pesto pasta, pizza, the possibilities are endless!
What I love about this recipe are the flavors that come through by adding lemon juice and minced garlic at the very end of roasting. It adds a burst of flavor and freshness and is such a simple way to upgrade your roasted cauliflower.
My girls love this cauliflower (the recipe works well with broccoli too!) and it’s a great way to get kids to eat more veggies.
Lemon Garlic Roasted Cauliflower
Ingredients
- 1 head of cauliflower cut into florets
- 1 tablespoon avocado oil
- 1/4 teaspoon paprika
- salt to taste
- 1 lemon juiced
- 1-2 garlic cloves minced
Instructions
- Preheat your oven to 425 degrees.While the oven preheats, chop the cauliflower florets into bite-size pieces and place them on a baking sheet. Sprinkle the cauliflower with avocado oil, paprika and salt to taste. Roast in a 425-degree oven for about 25 minutes, giving it a quick stir about half way through.While the cauliflower roasts, add the lemon juice and minced garlic to a small bowl.Once the cauliflower is fork-tender, turn the oven to broil and carefully pour the lemon juice and garlic mixture over the cauliflower. Give it a quick stir and broil for about 3 minutes until the cauliflower starts to brown slightly on top.Serve and enjoy as a delicious side dish!
