This week, we start distance swim team for my two older girls. They’re excited and I am too … it’s one thing that feels sort of normal. It’s funny when I look at our dinner plan for this week, it’s starting to look more like fall dinners even though it’s still hot here.
Here’s what we’re having for dinners this week. I hope you find some dinner inspiration here!
Monday: Summer Garden Salad with Smoked Chicken from Our Zesty Life. Simple and delicious.

Tuesday: Red Bean Quinoa Chili from Mel’s Kitchen Cafe over roasted sweet potatoes (even though it will be 100 degrees here!) The older girls have swim practice around when I start prepping dinner, so I wanted a quick throw-together dinner. My favorite way to roast sweet potatoes is this way from Live Simply. I don’t like my sweet potatoes too mushy, and these turn out perfect, always. I love topping this with plain Greek yogurt (in place of sour cream), a sprinkle of cheddar cheese and sliced avocado.

Wednesday: Sausage Pepper and Rice Skillet from Cook Plus. I love making a batch of brown jasmine rice for the week and using it for dinners during the week. It makes dinners come together so quickly. This is a delicious one-pan dinner that reminds me of jambalaya.

Thursday: Sheet Pan Chili Lime Salmon from Cucina De Yung. This is full of flavor and easy because it’s one-pan.

Friday: TBD. Dinner with friends. (I typically leave 1-2 nights open for dinner with friends, takeout, leftovers, anything that comes up.)
Saturday: TBD.
Sunday: Soup Sundays! Vegan Corn Chowder with Quinoa from Hummusapian. This sounds delicious and I’m looking forward to trying it.
