At least once a week, we have some type of bowl for dinner (Alex turns his into a burrito), with veggies, grains and protein. What I especially love about this Quinoa Cauliflower Bowl is that it’s packed with veggies (about 3 servings per bowl), lean protein, healthy fats and fresh ingredients. Plus, it’s super quick to make if you have cooked quinoa on hand.

Quinoa Cauliflower Bowl

Ingredients:

  • 2 cups riced cauliflower (I get mine from the refrigerated section at Trader Joe’s)
  • 1 cup cooked quinoa
  • 2 teaspoons extra virgin olive oil
  • 2 cloves of garlic, minced
  • salt and pepper, to taste
  • 1 can black beans, drained
  • 1/4 teaspoon cumin powder
  • 1 can corn, drained
  • 2-3 cups greens (mix of spinach, kale and romaine), with juice of half lime
  • 1/2 cup sliced grape tomatoes
  • sliced avocado
  • cilantro
  • fresh lime
  • plain Greek yogurt
  • fresh salsa

Heat olive oil and one clove of garlic in pan for about a minute, then add cauliflower and quinoa. Stir until warmed through. Stir in chopped cilantro and a couple squeezes of fresh lime juice and salt and pepper to taste.

In another pan, add remaining olive oil and garlic with black beans. Add cumin powder and heat over medium heat until warmed through.

In individual serving bowls, add about 1 1/2 cups mixed greens, 1/2 cup cauliflower quinoa mixture, 1/4 cup black beans and top with corn, grape tomatoes, avocado, cilantro, dollop of Greek yogurt and another squeeze of lime juice. You can also top with a fresh healthy salsa.

For the girls, I usually serve up a deconstructed version of this – a plate full of all the ingredients, separated.

This meal really fills me up and leaves me feeling great and healthy!
