This Peanut Butter Cinnamon Apple Chia Oatmeal has been one of my favorite breakfasts lately. And the girls’ too!

Why I love it

Apples: Apples are one of my favorite fruits. In this oatmeal they add natural sweetness that I love.

Peanut butter: We love peanut butter in our house. I love that it adds a little more protein to my oatmeal, and gives it a more creamy texture. Yum.

Chia seeds: These little seeds are full of fiber, which helps with digestion and feeling full. Plus, they also give oatmeal added protein.

Old fashioned oats: They’re a great source of fiber and carbs and give you fuel to start your day. Oatmeal also fills me up, especially when I add in more protein from peanut butter and chia seeds.

Cinnamon: Cinnamon is an anti-inflammatory and immunity-boosting spice. And it adds a little sweet flavor to this oatmeal.

This Peanut Butter Cinnamon Apple Chia Oatmeal is quick, filling, delicious and full of good-for-your-body ingredients. Win-win-win-win. 🙂

Peanut Butter Cinnamon Apple Chia Oatmeal

Apple Peanut Butter Chia Seed Oatmeal / Five Plates
Apple Peanut Butter Chia Seed Oatmeal / Five Plates

Ingredients (1 serving)

  • 1/2 cup old fashioned oats
  • 1 cup water
  • 1/2 apple, diced (I love organic Fuji apples)
  • 1 tablespoon chia seeds
  • 1-2 tablespoons (or a splash) of unsweetened almond milk (it depends on how thick or not you like your oatmeal)
  • 1 tablespoon peanut butter
  • 1/4 teaspoon (or a sprinkle) of cinnamon
  • 1 teaspoon honey (optional)

Instructions

Microwave instructions: In a microwave-safe bowl, add oats, water, diced apple and chia seeds. Microwave on high for 2 minutes.

Stovetop instructions: In a small pot, bring water the water to a boil, then add in oats, apple and chia seeds. Let it all cook together for about 5 minutes.

Next, add in a splash or two of unsweetened almond milk, peanut butter, cinnamon and optional honey. Stir it all up and enjoy!
