
The weather is getting slightly cooler here and I’m excited for some warm comforting October dinners. Butternut squash, soups, creamy chicken. So many good dinners this week.
Here’s what we’re having for dinner this week:
Monday: Romesco Pasta Salad with Burrata from Giadzy + arugula lemon parmesan salad. We’re making this pasta salad even easier by using Trader Joe’s Romesco Dip. Have you tried it yet? It’s so good we’ve been buying it 3x when we make a TJs trip. I’m going to add a simple arugula salad with parmesan cheese, lemon juice and a sprinkle of good extra virgin olive oil.

Tuesday: Butternut Squash & Black Bean Enchilada Skillet from Ambitious Kitchen. YUM. Anytime it’s a one-pan dinner, it’s a win!

Wednesday: Crockpot Tuscan Chicken from Clean Food Crush + arugula lemon parmesan salad. I saw this recipe on Instagram and immediately saved it because it looked so good, and it uses real ingredients! Looking forward to trying it. We’ll be serving it with an arugula salad with lemon, parmesan cheese and a sprinkle of good extra virgin olive oil. I might also serve the chicken with quinoa or brown rice.

Thursday: Leftovers.
Friday: TBD. We may have leftovers, or takeout.
Saturday: Kale Black Bean Avocado Burrito Bowl from Cookie + Kate. We’ve made this a bunch of times and it’s really good. The lime on the kale is perfect and all of the flavors are really delicious together. Alex turns his into a burrito. 🙂

Sunday: Soup Sunday! Chicken Tortilla Soup topped with a sprinkle of cheddar, fresh cilantro, a squeeze of lime, avocado and a dollop of Greek yogurt. This recipe from Salt & Lavender looks simple and delicious, especially since it’s in the Instant Pot.
