
These are the dinners in week 2 of the 6-week Fall Meal Plan I put together! Here are this week’s dinners:
Monday: Teriyaki Salmon Bowls. I feel so full in a good way after eating this dinner. It’s full of really good-for-you ingredients.

Tuesday: Black Bean Fajitas. These are staples in our house. You can easily use chicken if you prefer. We love topping ours with Siggi’s whole-milk plain yogurt (instead of sour cream), cilantro, lime & tomatoes or salsa.
Wednesday: Easy Pasta with Veggie + Turkey Marinara. This dinner comes together so quickly and is always one my girls love. Plus I love that there’s added veggies in the sauce that they eat!

Thursday: Fall Salad with beets, sweet potato, apple, goat cheese, pumpkin seeds … so many flavors of Fall! This has become one of our favorite Fall salads.

Friday: Cauliflower Crust Pizza with Broccoli, Mushrooms & Goat Cheese, recipe from Simply Real Health. Mmmm. I love using Trader Joe’s Cauliflower Pizza Crusts and topping it with lots of veggies.

Saturday: Leftovers, or takeout. TBD. I always leave at least one night a week free for flexibility to order takeout, have friends over, eat leftovers, etc.
Sunday: Lightened Up Cauliflower & Broccoli Cheddar Soup from Ambitious Kitchen. I love this soup, and love that it’s a “healthier” version but still tastes rich and delicious. Perfect for a cold night.
