This week is Alex’s birthday so I’m excited to celebrate him! One of my favorite things is to make a special dessert so I’m trying out a new Peanut Butter Banana Cake recipe and I can’t wait!
Here’s what’s for dinners this week:
Monday: Leftovers. We have a bunch of random leftover veggies and meals so we’ll have a leftover night to eat up as much as we can.
Tuesday: Salt & Pepper Crusted Sea Bass from Killing Thyme (without the butter sauce) with roasted brussel sprouts and Peanut Butter Banana Cake from Ambitious Kitchen. I can’t wait for this meal and to celebrate Alex! The sea bass has become a favorite after a friend shared the recipe with me, plus it’s so easy. And we are big fans of peanut butter, so I hope the cake is a winner.
Wednesday: Quinoa Cauliflower Bake. This is such a quick and delicious dinner that’s easy to tweak with whatever you like. I am using the recipe to turn it into a bake instead, mixing everything together and topping with a little cheese, then put it all in the oven until it warms and the cheese is melty. Then we top with avocado, Greek yogurt and more lime juice and cilantro.
Thursday: Cauliflower Fried Rice from Iowa Girl Eats. This dinner couldn’t be easier. I use frozen riced cauliflower also add in about a cup of cooked edamame, diced mushrooms and 3 eggs (instead of 2).
Friday: Instant Pot Red Curry Lentils from Pinch of Yum with Cashew Broccoli & Zucchini. This veggie side is super simple and delicious. Add chopped broccoli & zucchini to a pan with 1T avocado oil, cook until the veggies brown a bit but are still crispy. Add a few sprinkles of yellow curry powder, turmeric, garlic powder and salt and pepper. Add in about 1/4 cup cashews and cook until warmed, then serve. Yum!
Saturday: Dinner out.
Sunday: Veggie Quiche. I’ll be making a quiche with a bunch of leftover veggies. My favorite combination is bell peppers, mushrooms, artichoke, tomatoes and spinach. Topped with a little Swiss and Parmesan cheeses.
