I can’t believe this is the last week of August. We’re still finding a routine with distance learning with my girls, so I’m keeping dinners super simple and easy again this week. I hope you find these healthy dinner ideas helpful for your family too.
Here’s what we’re planning for dinners this week:
Corn, Tomato & Avocado Chickpea Salad from Half Baked Harvest with naan. Doesn’t this look delicious?!

Taco Tuesday! Ground turkey tacos with homemade taco seasoning topped with avocado, salsa, lettuce and a sprinkle of cheese. Quick & easy & delicious! I’ll also make a side garden salad with my favorite homemade red wine vinaigrette. This recipe from Kay’s Clean Eats is a great simple one.

Veggie curry. This is such an easy dinner. I have some Trader Joe’s Teeny Tiny Potatoes that I’ll add to a pan with bell pepper and cauliflower, a can of diced tomatoes, a can of coconut milk (TJs has a great guar gum-free one), yellow curry, turmeric and salt and pepper to taste. Let it simmer until the potatoes are tender and then serve it over brown jasmine rice. Topped with a squeeze of lemon or lime and some cilantro. Yum! I love following this recipe from Jo Cooks for the curry sauce.

Roasted salmon and veggies with a tahini sauce. A simple salmon recipe I like is this one from Tone It Up. I’ll also roast some broccoli, cauliflower and brussel sprouts and then make a tahini sauce with lemon and garlic.

Cheesy Enchilada Rice Skillet from Damn Delicious. This is such an easy, throw-everything-together dinner and it’s delicious too.
