
I can’t believe it’s already June! Last week we celebrated the end of school and so now it feels like summer here. Our dinners look lighter, more fruity and fresh during the summer (I have a big roundup of some favorite summery breakfast, lunch, dinner and desserts we love making HERE).
I’m in the middle of the Tone It Up Summer Tone Up challenge, so some dinners will be from that meal plan.
So, if you’re looking for dinner ideas and recipes, here are 5 dinners we’re planning for this week! (With room for leftovers and/or take-out nights.)
Here’s what’s for dinner this week:
Pasta with Fresh Corn Pesto from Cook Like a Champion. This dinner takes a little time, but is so worth it! All of the flavors work SO well together, this is one of my favorite dinners to make at least once during corn season. The sweetness from the corn, the saltiness from the bacon, the freshness of basil, nuttiness of parmesan … YUM. It’s worth it to use fresh (from the refrigerated section) or homemade pasta for this.

Pesto Shrimp Kebabs. These are so simple I don’t typically follow a recipe for this these, but here’s one from Kitchen Swagger you can use. I mix together shrimp and pesto and then put about 4-5 shrimp on a skewer. Grill until they’re done and enjoy! I’ll be serving this with grilled veggies: zucchini, bell pepper and sweet potato.

Crunchy Asian Ramen Noodle Salad from Gimme Some Oven. I love the flavors and textures of this salad. And adding mango is a little different and delicious! Plus, it’s easy to throw together. If you’re making it ahead of time, I recommend adding avocado, ramen noodles and the dressing just before serving.

Tray Bake from the Tone It Up Summer Tone Up challenge. Simple. Yummy. With sweet potatoes, broccoli, chickpeas and a tahini dressing.
