
One of the things that keeps me on track with healthy eating is making a dinner meal plan every week with healthy dinner ideas. Usually I plan out what dinner we’ll have for each night, but right now that seems unnecessary since we’re home and busy plans aren’t driving what we eat for dinner. Instead I’m going by what sounds good that night. So I’ve created my meal plan this week with 5 dinners we’ll have throughout the week, anytime.

Here’s what’s for dinner this week:
Oven Tacos from Mommy I’m Hungry and Summer Picnic Poblano Salad from Simply Real Health and margaritas for Cinco de Mayo. YUM. I love a good margarita and am excited for a fun dinner. These tacos aren’t the healthiest, but my girls LOVE them. We use ground turkey in ours, and top them with plain Greek yogurt, black olives, cabbage, cheddar cheese and salsa or grape tomatoes.
Farmers Market Salad with Cornbread Croutons. This is a copycat from Sacramento restaurant Paesano’s and is full of so many yummy flavors and textures. It’s mixed greens, halved grape tomatoes, corn, avocado, goat cheese, beets, slivered almonds, diced dates and cornbread croutons. Find the recipe HERE.
Macadamia Nut-Crusted Tilapia from the Simply Keto cookbook with roasted asparagus and broccoli. My dad sent me this cookbook because he’s been loving it lately and I’m excited to give this recipe a try. It uses lemon and parsley and looks like a quick dinner.
Pesto Pasta with Peas and Chicken Sausage from Real Simple. This is such a simple dinner to put together and my girls like it too. We’ll add any leftover roasted broccoli and asparagus too.
Sweet Potato Black Bean Enchilada Casserole from Kim’s Cravings. I have a bunch of sweet potatoes to use up so this seems perfect and delicious.
