
A lot of our dinners for the next 5 weeks will be from the Tone It Up Summer Tone Up meal plan, because I’m participating in a 6-week health and fitness challenge. Their recipes are delicious, colorful and good for your body.
If you’re looking for dinner ideas and recipes, here are 5 dinners we’re planning for this week! (With room for leftovers and/or take-out nights.)
Here’s what’s for dinner this week:
Pesto Pasta with Veggies & Chicken Sausage. This is a favorite in our house. It’s so quick, easy and versatile. Some of our favorite veggies to add are broccoli, asparagus, peas, grape tomatoes, corn … really any veggies are delicious in this!
I don’t typically follow a recipe for this one, but use your favorite pasta, pesto, chicken sausage and veggies and mix them all together in a big bowl. I usually quickly sauté the veggies and sausage while the pasta cooks and it comes together in about 20 minutes! You can also sprinkle red pepper flakes and/or parmesan cheese on top.
(This is a dinner that my girls love too! I included it in a roundup of healthy dinners my girls eat and love if you’re looking for some healthy kid-friendly dinner ideas! 🙂 )

Flatbread with Summer Vegetables from Tone It Up. We’ll use Trader Joe’s Cauliflower Pizza Crust and add a bunch of veggies and a little cheese. The girls love making their own pizzas too.

Spiced Chickpeas & Creamy Veggies from Tone It Up. This recipe has cucumber, dill and a creamy sauce and looks so fresh and delicious. Alex and the girls will probably turn this into a wrap.

Chicken Avocado Tacos from Tone It Up. We love Taco Tuesday in our house! We always have some version of it: tacos, bowls, fajitas … yum.

Tray Bake from the Tone It Up Summer Tone Up challenge. Simple. Yummy. With sweet potatoes, broccoli, chickpeas and a tahini dressing.
