
This week, I start the Tone It Up Summer Tone Up challenge! It’s a 6-week challenge where I re-focus on workouts (they’re already planned out for me!), and eating real foods (the challenge also includes a meal plan!). So, a lot of our dinners for the next 6 weeks will be from the Tone It Up Summer Tone Up meal plan. Most of their recipes are really delicious and simple.
If you’re looking for dinner ideas and recipes, here are 5 dinners we’re planning for this week! (With room for leftovers and/or take-out nights.)
Here’s what’s for dinner this week:
Tray Bake from the Tone It Up Summer Tone Up challenge. Simple. Yummy. With sweet potatoes, broccoli, chickpeas and a tahini dressing.

Spicy Black Bean Tacos with Cauliflower Rice from Tone It Up Summer Tone Up challenge. I like to make cauliflower rice with a small spoonful of coconut oil, riced cauliflower, cilantro, lime and salt and pepper. Simple and delicious! Alex and the girls use tortillas for these, but I’ll most likely turn it into a bowl.

Salmon with Pineapple Avocado Salsa and quinoa. I loosely follow this recipe from Tone It Up, and add avocado to the salsa. I serve it with quinoa with cilantro and lime.

Veggie Spirals with Meatballs. I don’t really follow a recipe for this one, but use carrot or butternut squash spirals, and serve it with meatballs and marinara sauce. This is a super quick dinner and my girls love it too.
Buddha Bowl with Tahini Dressing from Tone It Up Summer Tone Up. This dinner uses similar ingredients as the Tray Bake (above), and I love the easy tahini dressing with it.
