Things are getting interesting with the Coronavirus, but I’m hoping to still get groceries delivered thanks to Instacart so we can still have healthy family dinners. I’m planning to use more fresh stuff this week and save the canned and non-perishable ingredients in case we really need them.
Here’s what’s for dinner this week, if all goes as planned with groceries available:
Monday
Leftover Chicken, Brown Rice and Broccoli.
Tuesday
Creamy Coconut Red Lentil Dahl from Kiwi and Bean blog. This sounds simple and delicious and I can’t wait to try it.
Wednesday
Smokey Sweet Potato Burgers from How Sweet Eats, with roasted broccoli. These burgers sound so so so good!
Thursday
Salmon and roasted veggies. Simple, healthy and delicious.
Friday
Leftovers. I’m planning to have a couple nights where we have leftovers for dinner. Using up some of our fresh produce, leftover dinners, whatever we’re all in the mood for.
Saturday
Take out. I love cooking, but have been going straight for the last few weeks and I need a little break, so we will be supporting a local restaurant and getting take out. 🙂
Sunday
TBD. This may be pancakes for dinner, or leftovers, or a new recipe. We’ll see!
