When I’m meal planning and searching for dinner ideas, I try to find dishes that are quick, simple, healthy and delicious for my family. But also dinners that are light on cheese and full of veggies, fueling carbs and different types of proteins.

Here’s what’s for dinner this week, if all goes as planned with groceries available:
Monday
Salt + Pepper Salmon + roasted brussel sprouts with lemon + roasted carrots with cumin. Such a simple and quick dinner.
Tuesday
Pesto pasta + leftover roasted brussel sprouts + roasted zucchini. It’s St. Patrick’s Day, so we’re having a green-themed dinner! My favorite store-bought pesto is Trader Joe’s Vegan Kale, Cashew & Basil Pesto. We’ll also be using Trader Joe’s quinoa and brown rice pasta.
Wednesday
Turkey Sausage and Veggie Polenta Bowls from the Simply Real Eating cookbook. I’m so excited to try this dinner from this new cookbook (it’s on sale on Amazon right now for $15.99 if you’re interested in grabbing a copy of this beautiful cookbook!) This recipe looks delicious and full of veggies. And my girls (and I) love polenta!
Thursday
Leftover night!
Friday
Broccoli, Basil and Goat Cheese Pizzas from the Simply Real Eating cookbook. We’ll be using Trader Joe’s Cauliflower Crust with this recipe. (The cookbook is on sale on Amazon right now for $15.99 if you’re interested in grabbing a copy of this beautiful cookbook!)
Saturday + Sunday
TBD. We may have friends over one of these days, so I’m not sure yet what we’ll make. I typically leave at least one meal a week TBD to give us flexibility to eat leftovers, order takeout, have friends over, etc.
