I took a week off from posting our dinner plan because we spend a week in Lake Tahoe. It was such a nice break from being home 24-7. π
This week I’m looking forward to trying a couple new recipes and making some of our family favorites too.
Here’s what’s for dinner this week:
Tex Mex Polenta Bowls from Forks Over Knives. I love polenta so I’m excited to try this recipe. It looks so simple, but full of delicious flavors.

Mediterranean Salmon from The Roasted Root with roasted veggies. This salmon looks so delicious and full of lots of flavors. I get bored with salmon easily, so I’m excited to try this recipe to mix things up.

South of the Border Pizza from Cooking with Trader Joeβs Cookbook: Vegetarian. My girls call this bean pizza π and itβs a quick and yummy dinner. We sometimes use Trader Joeβs pizza dough, other times we use a frozen cauliflower pizza crust and my girls love both. Chunky salsa is the sauce (find one with no added sugar), topped with pinto beans and organic cheddar cheese. Then once itβs all hot and melty, top it each slice with guacamole (find one that only has avocado and seasonings), and chopped cilantro.

Chicken Apple Sausage and Roasted Broccoli and Sweet Potato. I like roasting cubed sweet potato with a little coconut oil and salt and pepper, and broccoli with a little garlic powder, salt & pepper, extra virgin olive oil and lemon juice. Simple and delicious.
Pesto Pasta with Squash. We have a bunch of delicious zucchini and yellow squash from our garden to use. I always look forward to cooking with our summer garden veggies. π Saute the squash with a little garlic, olive oil and salt and pepper, then add it to cooked pasta with pesto. Sprinkle with a little parmesan and fresh lemon squeeze. Yum.
