I’m looking forward to this week full of some of my favorite salads, plus a copycat takeout dinner and a new rice recipe. I hope this healthy dinner meal plan helps you find ideas for your dinners too!
Here’s what’s for dinner this week:
Sweet Potato Apple Avocado Salad from Simply Real Health with smoked sweet potatoes. I love the flavors of this salad, they’re all so good together. I’ll add beets to it too, because we love beets in our house. (This recipe is also in the cookbook, Simply Real Eating, which is full of delicious recipes and healthy living tips.)

Crunchy Asian Ramen Noodle Salad from Gimme Some Oven. I love the flavors and textures of this salad. And adding mango is a little different and delicious! Plus, it’s easy to throw together. If you’re making it ahead of time, I recommend adding avocado, ramen noodles and the dressing just before serving.

Grilled Chicken with Avocado Corn Salsa. This chicken recipe is one my mom used to make all the time and it just tastes like summer. It’s simple and super flavorful. Find the recipe HERE.
Healthy Chow Mein (Panda Express Copycat) from Slender Kitchen. This recipe sounds so delicious, and I love that it uses 4 cups of shredded cabbage. I think I’ll also add some red bell pepper, mushrooms and water chestnuts.

Black Bean Fajitas with Instant Pot Mexican Green Rice from Chef de Home. My girls love tacos and burritos, so we eat that a lot! Plus, black bean fajitas are a super quick dinner.
