A holistic wellness plan just for you that fits into your already busy mom-life.

It’s starting to feel like spring and when the weather starts warming up, I find myself leaning more towards quicker dinners so that I can soak up the sunshine more. So, this week we’re having some quick and lighter dinners.

Here’s what’s for dinner this week:

Monday: Veggie stirfry + cashews + brown jasmine rice. This is such a quick and healthy dinner. I take a mix of veggies I have on hand, like broccoli, zucchini, mushrooms and bell peppers, (snap peas and carrots are also great in this) heat them up with a little avocado oil, then add a handful or two of cashews to warm up with the veggies. I make a batch of Pressure Cooker Brown Jasmine Rice from Dad Cooks Dinner (add 1T coconut oil in there), then serve it all together – veggies and rice, topped with a splash of tamari/soy sauce and coconut aminos.

Tuesday: Pesto salmon + Garlic Parmesan Roasted Delicata Squash from the Kitchn. I picked up the pre-cut squash at Costco so this should come together super quick. I bake wild-caught salmon (also a Costco favorite), with Trader Joe’s vegan pesto on top.

Wednesday: Mediterranean Farro Salad from Budget Bytes.

Thursday: Vegan Kale Caesar Salad from Oh She Glows + roasted brussel sprouts. One of my favorite salads.

Friday: Out to dinner or takeout.

Saturday: Broccoli & Butternut Squash Noodle ‘Mac & Cheese’ from Inspiralized. I picked up Butternnut Squash Spirals from Costco and am excited to give this recipe a try.

Sunday: TBD. I typically leave one meal a week TBD to give us flexibility to eat leftovers, order takeout, have friends over, etc.
