This week virtual learning starts for my girls. Yikes. I have a feeling it’s going to be a busy week adjusting to new routines and big emotions. So, I’m keeping dinners really quick and easy this week. I hope you find this healthy summer dinner meal plan helpful.
Here’s what dinners we’re planning for the week:
Roasted Summer Veggies with Parmesan Polenta from Foraged Dish. We have a lot of summer veggies ready in our garden: yellow squash, zucchini, bell pepper and tomatoes so this dinner is perfect. We’ll swap the eggplant for mushrooms because I love mushrooms.

Sourdough Bruschetta with Watermelon Feta Arugula Salad from Ina Garten. We have a bunch of tomatoes coming in and Raegan has been asking to make bruschetta. Perfect summer dinner.

Black Bean Burgers from Happy Herbivore and roasted sweet potatoes and a salad. These burgers couldn’t be easier to make, plus they’re really delicious. Such a quick weeknight dinner that takes a minute to mix and mash everything together, then less than 20 minutes to bake. They’re delicious with tomato, lettuce and avocado.

Penne with Mushrooms, Italian Sausage and Broccoli. This is such a quick and easy dinner I used to make all the time. The lemon and broth brings a lot of flavor to the mushrooms and whole dish.
Smoked Pesto Salmon with a beet, tomato, avocado butter lettuce salad. We smoked salmon in our new kamado grill a couple weeks ago and it was so delicious. My new favorite summer salad: butter lettuce, zucchini, tomato, avocado, beets, a little goat cheese and my favorite (and easiest) red wine vinaigrette.
