
How is it already September? We’re in the middle of birthday season here — my middle daughter Leah turns 6 this week! I can’t wrap my mind around her turning 6 yet … she still seems like my little Leah.
So we’ll be celebrating her this week, and keeping other dinners simple as always and delicious. I hope you find some dinner inspiration here!
Here’s what we’re having for dinners this week:
Monday: Mediterranean Salmon from The Roasted Root with roasted veggies. This salmon is cooked with pesto, artichoke, sun-dried tomatoes and olives … yum!

Tuesday: Cheesy Cauliflower & Sweet Potato Nachos from Eating Bird Food. I’ve made these before and added thinly sliced sweet potato and the sweet potato made the dinner! So delicious. So if you try this recipe, I recommend thinly slicing your sweet potatoes in rounds, adding the same oil and seasoning that the recipe calls for the cauliflower, and roasting the sweet potatoes for about 20 minutes before starting the cauliflower.

Wednesday: Cauliflower Fried Rice. This is one of my favorite one-pan, quick and healthy dinners. Plus it is packed with tons of veggies so I feel great after eating it.

Thursday: Leah’s birthday dinner! Grilled pizzas and Caesar salad & cupcakes. Leah requested grilled pizzas (her favorites: bean pizza, and cheese with olives), and for dessert cupcakes with chocolate frosting and sprinkles.

Friday: Pesto Pasta with Sausage and Veggies. You can tweak this dinner depending on what you like. I love using Trader Joe’s vegan kale pesto, Trader Joe’s Brown Rice and Quinoa Fusilli, Aidells chicken apple sausage, and add in veggies like peas, grape tomatoes, roasted brussel sprouts, asparagus and/or broccoli. I loosely follow this recipe from Real Simple.

Saturday: TBD. Another birthday dinner celebration with Alex’s mom, so it will involve some yummy dessert too. 🙂
Sunday: TBD. I typically leave 1-2 days open for takeout, leftovers, spur of the moment plans, frozen pizza, etc.
