
It’s my youngest’s birthday this week! Jo turns 3, so we’re going to celebrate with some delicious food and cupcakes. ๐ We’re making lots of colorful dinners this week, full of lots of flavors and summery ingredients. I always look forward to colorful dinners!
Here’s what’s for dinner this week:
Damn Good BLT Pasta Salad with Creamy Jalapeรฑo Cashew Dressing from Ambitious Kitchen. This dressing sounds so good! I can’t wait to try this recipe.

Chicken Gyros from Cooktoria. These are SO good. We’ve made them a handful of times in the last few months and they might be one of my favorite recent recipe finds. I definitely recommend giving these a try!

Chipotle Citrus Superfood Vegan Tacos from Happy Healthy Life. I’d never been a big fan of tofu until I tried these. They’re grilled with chipotle and agave so they have the sweet spicy combo which is so good. The flavors of these tacos are so fresh and unique. There’s a mango avocado gogi berri salsa and a kale cilantro lime quinoa and together with the tofu — so good!

Salmon and veggies. Always simple, delicious and healthy. We’ll use up veggies from our garden.
Jo’s birthday dinner! Chicken Croissant Sandwiches, fruit salad, beet goat cheese salad and funfetti cupcakes. I love making a special dinner for my girls’ birthdays and think of dinners they love most. These sandwiches have chicken, apple, grapes, walnuts, cranberries, celery and a thyme Greek yogurt sauce.
