
One of the things that keeps me on track with healthy eating is making a dinner meal plan every week with healthy dinner ideas. Usually I plan out what dinner we’ll have for each night, but right now that seems unnecessary since we’re home and busy plans aren’t driving what we eat for dinner. Instead I’m going by what sounds good that night. So I’ve created my meal plan this week with 5 dinners we’ll have throughout the week, anytime.

Here’s what’s for dinner this week:
Cauliflower Curry from A Pinch of Yum served over brown rice. This is always a favorite and really delicious as lunch leftovers. I keep coming back to this dinner because it’s so easy and delicious (TIP: Using pre-chopped butternut squash and cauliflower florets make this dish come together super fast!)
Chicken Gyros from Cooktoria. These look simple and delicious.
South of the Border Pizza from Cooking with Trader Joe’s Cookbook: Vegetarian. We all love this pizza. It uses chunky salsa as the sauce, pinto beans, cheese and then topped with guacamole and cilantro. It’s so simple but really delicious.
Cauliflower Fried Rice with pineapple. This is one of my favorite quick dinners. The recipe is in my download of 7 quick and healthy dinners. Plug in your name and email at the bottom of the post and you’ll get it in your inbox. 🙂
Salmon with roasted sweet potato wedges and broccoli.
