
One of the things that keeps me on track with healthy eating is making a dinner meal plan every week with healthy dinner ideas. Usually I plan out what dinner we’ll have for each night, but right now that seems unnecessary since we’re home and busy plans aren’t driving what we eat for dinner. Instead I’m going by what sounds good that night. So I’ve created my meal plan this week with 5 dinners we’ll have throughout the week, anytime.

Here’s what’s for dinner this week:
Orzo with Roasted Veggies from Recipe Girl. I tweak the veggies a little based on what we like best and roast zucchini, mushrooms, bell pepper and tomato. This is such a delicious dinner that makes a ton and is even better as leftovers as lunch or dinner another night too. I love dinners like that!
Burgers: I have some frozen burgers I stocked from Trader Joe’s. We’ll either have the Chili Lime Chicken Burgers or Simply Seasoned Tuna Burgers, or both! I like topping burgers with avocado, lettuce and tomato. I might add cheese to Alex’s and the girls’ burgers. (Find more of my favorite healthy Trader Joe’s freezer items HERE. I love keeping these items stocked so I can use them for nights I don’t really feel like cooking from scratch ;))
Caramelized Carrot Risotto from Sunset and a big salad: I’ve made this risotto a ton of times and it’s so good! The combination of the sweet carrots, creamy mascarpone and thyme … my mouth is watering just thinking about it! It takes a little time and patience but it’s so worth it. I’ll serve this with a salad using leftover veggies.
Lemon Chicken and Red Potatoes in Foil from Damn Delicious. Anything with red potatoes I love 🙂 so I’m excited to try this one. It looks so simple and delicious.
Black Bean Fajitas. This is a quick 20-minute dinner that we eat A LOT. My girls love it too. The recipe is in my download of 7 quick and healthy dinners. Plug in your name and email at the bottom of the post and you’ll get it in your inbox. 🙂
