When I’m meal planning and searching for dinner ideas, I try to find dishes that are quick, simple, healthy and delicious for my family. But also dinners that are light on cheese and full of veggies, fueling carbs and different types of proteins.

Here’s what’s for dinner this week:
Monday
Pesto salmon + Trader Joe’s Cauliflower Gnocchi and Kale Gnocchi with pesto. The gnocchi can get mushy if you follow the directions on the package, so instead I like to bake them. My favorite pesto to use is Trader Joe’s Vegan Kale, Cashew & Basil Pesto.
Baked TJ’s Cauliflower & Kale Gnocchi
- Preheat oven to 425 degrees.
- First, take both the kale and cauliflower gnocchi out of the bag and onto a microwave safe plate, then defrost for 2 minutes. You may need to defrost one bag at a time.
- In a large bowl, mix gnocchi together with 1-2 tablespoons avocado oil. Then place onto a baking sheet lined with parchment paper.
- Bake in oven 12-15 minutes until the gnocchi are warmed and firm.
- Serve gnocchi with your favorite pesto.
Tuesday
Taco-Stuffed Sweet Potatoes. I love this recipe from Live Simply for baking sweet potatoes. I top the sweet potatoes with taco meat, using 1-2 pounds of ground turkey cooked with homemade taco seasoning. Then top everything with chopped tomatoes and sliced avocados.
Wednesday
Mediterranean Bean Salad, swapping out the couscous and instead adding in a can of drained white beans. This salad is so quick, simple and delicious — one of our favorites.
Thursday
Sweet Potato Burrito Bowls. This is a super simple dinner using leftover baked sweet potatoes, black beans, cilantro lime quinoa and topped with salsa, avocado and lime juice.
Friday
Fish + Avocado Arugula Salad. Fish TBD but probably halibut or mahi mahi baked with extra virgin olive oil, a squeeze of lemon juice and salt & pepper. The arugula salad is super simple with arugula, avocado, pine nuts, a little parmesan cheese and dressing of extra virgin olive oil, lemon juice, garlic and salt & pepper.
Saturday
Cauliflower Curry from A Pinch of Yum + brown jasmine rice (my favorite recipe from Dad Cooks Dinner). {I prep the rice beforehand since itβs also cooked in the Instant Pot.}
Sunday
TBD. I typically leave one meal a week TBD to give us flexibility to eat leftovers, order takeout, have friends over, etc.
