When I’m meal planning and searching for dinner ideas, I try to find dishes that are quick, simple, healthy and delicious for my family. But also dinners that are light on cheese and full of veggies, fueling carbs and different types of proteins.

Here’s what’s for dinner this week:

Monday

Salt + pepper salmon + The Fall Salad You Won’t Be Able to Quit from Simply Real Health (I’m adding in beets and sliced almonds instead of pumpkin seeds). I’ve been in a Monday night salmon kick. It’s a great, quick meal to start the week off on a feel-good note. 🙂

Tuesday

Quinoa Taco Bowls. This is such a super simple dinner of quinoa with cilantro and lime + black beans + chopped spinach as the base + topped with salsa and avocado. Yum.

Wednesday

Buttery Cabbage from BB Wellness + roasted sweet potato + zucchini. When we did Whole 30 about a year ago, I came across this cabbage recipe and figured I’d give it a try. I had no idea it would be so delicious, so easy and something I’d crave! If you’ve never had or thought about cooking cabbage– I encourage you to give this recipe a try, you may be surprised to find you really like it!

Thursday

Lemon Dill Salmon from The Nutrition Twins + baby red potatoes. My mom used to make red potatoes with a dill sauce and dill is now a flavor I associate with memories of my mom.

Friday

Pasta + Ground Turkey Veggie Marinara. This is such a quick dinner that my girls love! Plus, it’s the night before I run a 10K, so I need some extra fuel. 🙂 Find the recipe in my free download below: 7 favorite quick + simple + healthy + delicious dinner recipes.

Saturday

Tex Mex Casserole from Oh She Glows. This is such a delicious and veggie-packed dinner. We add organic cheese instead of vegan cheese.

Sunday

TBD. I typically leave one meal a week TBD to give us flexibility to eat leftovers, order takeout, have friends over, etc.
