
It’s my birthday this week, so we’re starting the week with takeout and filling the week with some of my favorite fall easy dinners. These are all so good! Dinners we make all the time when the weather gets cooler. One, roasted kaboucha squash soup, is a new recipe I can’t wait to try.
Here’s what we’re planning for dinners this week:
Monday: Takeout for my birthday!
Tuesday: Chicken Tacos. Always simple and delicious. Topped with guacamole, tomatoes, cilantro and plain yogurt (instead of sour cream).

Wednesday: Crockpot Black Bean Quinoa Chili from Tone It Up topped with chopped cilantro, avocado slices and a dollop of plain Greek yogurt. This is an easy chili that makes leftovers perfect for lunch the next day.

Thursday: Cauliflower Curry from Pinch of Yum with Brown Jasmine Rice. I’ve made this curry so many times I have the recipe memorized. It’s so good, and quick to make. I cook the rice in the Instant Pot first, about half an hour before starting the curry.

Friday: Sausage Apple Sweet Potato Tray Bake from PB Fingers with Easy Fall Salad (minus the sweet potatoes). We’ve made this tray bake a bunch of times and it’s always a winner. And it makes the house smell like Thanksgiving. 🙂


Saturday: Leftovers.
Sunday: Roasted Kaboucha Squash Soup from Simply Real Health with grilled cheese and roasted broccoli. This soup recipe looks so easy and good, I can’t wait to try it.
