We’re doing a meatless January, so for the month, I’ll be sharing our plant-based family dinner ideas. We’ll be focusing on fruits, veggies, nuts, seeds, beans, legumes. And eating a little organic cheese too.
If you want to join us as we eat more plant-based meals, HERE’s last week’s plant-based dinners too that were delicious. Especially the burrito bowls and cilantro rice avocado stack.
Here’s what we’re planning for dinners this week:
Monday: Cauliflower Curry from Pinch of Yum over Brown Jasmine Rice, all in the Instant Pot. Start the brown rice about half an hour before the curry and then transfer the rice from the Instant Pot to another bowl to keep warm. Then start the curry & no need to wash the Instant Pot in between!

Tuesday: Mega Crunch Sun-Dried Tomato-Pepita Taco Salad from Oh She Glows Dinner cookbook. I love taco salads, so I’m looking forward to trying this meat-less version using pepitas and a lime dressing.

Wednesday: Leftovers
Thursday: Pasta with Veggie Marinara. I love taking a jar of clean marinara and adding in a bunch of veggies like carrots, mushrooms and spinach. I love using Trader Joe’s quinoa brown rice fusilli for our pasta nights.

Friday: Veggie Pesto Cauliflower Crust Pizzas. Using Trader Joe’s Cauliflower Pizza Crust we’ll top it with pesto and lots of veggies like mushrooms, broccoli, artichoke hearts and tomatoes. And a sprinkle of cheese.
TIP: Keep a bagged salad or ingredients to make a quick salad on hand for pizza nights. And serve it alongside to get an extra serving of veggies! Especially if you opt for takeout pizza, this is a great way to get some greens in your dinner.

Saturday: TBD. Possible takeout, or another leftover night.
Sunday: Potato Leek Pesto Soup. I’m going to make a batch of soup using potatoes, leeks and a little pesto, inspired by an older favorite recipe from an Italian cookbook I have, but I’m going to try a healthier spin on it. If it’s great, I’ll share the recipe!
