
This week, we’re celebrating my oldest daughter Raegan turning 8! I can’t believe I’ve been a mom for 8 years now. We’re going to celebrate with whatever dinner she requests. 🙂 And the rest of the week is full of yummy plant-based healthy easy dinners. I hope this gives you some dinner ideas!
Here’s what we’re having for dinners this week:
Monday: Trader Joe’s Cauliflower Gnocchi with Roasted Veggies. We’re going to bake 2 bags of Trader Joe’s Cauliflower Gnocchi on a baking sheet with a little avocado oil, a bunch of grape tomatoes, sliced mushrooms, broccoli in a 420 degree oven for about 15 minutes. Then topped with a sprinkle of goat cheese.

Tuesday: Cheesy Enchilada Skillet from Damn Delicious. I use Brown Jasmine Rice in this, and make it about half an hour before I start making the enchilada skillet. Once the rice is cooked, this dinner comes together really fast, and everyone in our family loves this dinner.

Wednesday: Pasta with Veggies, Chicken Apple Sausage & Pesto. Super simple and you can use whatever veggies you have on hand. Cook up the sausage and veggies while making the pasta, then combine it all in a large bowl, add pesto and enjoy!

Thursday: Mediterranean Salmon from The Roasted Root + Lemon Roasted Broccoli. For the broccoli, mix together 1 large clove of garlic, juice of 1 lemon, salt & pepper, extra virgin olive oil in a large bowl. Then, add broccoli florets (about 1 head or 1 bag of pre-cut florets) and stir to combine. Then transfer to a baking sheet and roast for 15-20 minutes in 400 degrees.

Friday: Raegan’s birthday! Dinner TBD depending on what she requests. 🙂
Saturday: Loaded Sweet Potato Fries. Really simple and easy so we can enjoy Halloween night!

Sunday: Crustless Veggie + Sausage Pizza from Simply Real Health. This is an easy one-pan dinner that’s really delicious too. It has become one of our favorites.
