Trader Joe's Sweet Potato Fries: An easy weeknight dinner recipe: Loaded Sweet Potato Fries

We made these Loaded Trader Joe’s Sweet Potato Fries the other night and my girls LOVED this dinner. So did Alex & I. All of our plates were cleaned! Not only that but it was easy! And pretty hands-off. And so good! This will become a go-to dinner for us, I can already tell. 🙂 So of course I wanted to share the recipe with you!

Loaded Trader Joe’s Sweet Potato Fries

Easy dinner recipe using Trader Joe's ingredients: Loaded TJs Sweet Potato Fries

Ingredients:

  • 2 bags of frozen Sweet Potato Fries
  • ½ can of black beans, drained
  • ½ cup of shredded Unexpected Cheddar Cheese
  • ½ cup of frozen Super Sweet Cut White Corn

Topping ideas:

  • Halved grape tomatoes
  • Sliced olives
  • Mashed avocado or guacamole
  • Plain Greek yogurt
  • Chopped cilantro

Directions:

Bake the sweet potato fries according to the package (spread the fries on a baking sheet and bake at 425 degrees for about 18 minutes).

Once the fries are baked, top them with black beans, corn and cheese. Bake for another 5-8 minutes until the cheese is melted. Then, broil for 1-2 minutes until the cheese turns golden. 

Take it out of the oven, and top with your favorite toppings. We used halved grape tomatoes, sliced black olives, guacamole, plain Greek yogurt and fresh cilantro. We also added a spoonful of Chipotle Bitchin’ Sauce (have you tried this stuff?! It’s so good with sweet potatoes!) It would also be great with grilled bell peppers and onions on top too.

Serve and enjoy!
