
I still can’t believe it’s October. I love making warm, comfort foods during the Fall, like soups and one-pan dinners. We’re making some easy, quick and comforting Fall dinners this week, and I’m looking forward to it!
Here’s what we planning for dinners:
Monday: Crustless Veggie + Chicken Sausage Pizza from Simply Real Health. A really easy and good dinner. I don’t even miss the crust. 🙂

Tuesday: Loaded Sweet Potato Fries. YUM. We’ll be tweaking this recipe from Euphoric Vegan using Trader Joe’s frozen sweet potato fries, black beans, corn, tomatoes, cheddar cheese, chipotle Greek yogurt and guacamole. I’m really looking forward to this dinner!

Wednesday: Pesto pasta with broccoli, peas and asparagus. We have a TON of basil from our garden so I made some fresh pesto that I’ll use with Trader Joe’s Brown Rice & Quinoa Fusilli with veggies. One of our family’s favorite easy dinners. Use your favorite pesto, veggies and add chicken sausage too if you like.

Thursday: Fall Salad from Simply Real Health. This is an easy and delicious salad with lots of fall flavors. Roasted diced sweet potatoes, apple, avocado, goat cheese, butter lettuce, and I like adding dried cranberry and Trader Joe’s Pumpkin Spiced Pumpkin Seeds. Beets are also great in this. So good.

Friday, Saturday: Out. I’m out of town this weekend so Alex and the girls will fend for themselves. They’ll probably have frozen Trader Joe’s pizza, takeout, or make breakfast for dinner. 🙂
Sunday: Soup Sunday! Tomato Soup with Roasted Chickpeas from Oh She Glows with roasted broccoli and grilled cheese. This is a really simple soup that we’ve made a bunch and it’s always delicious. My girls especially love dipping their grilled cheese in it.
