
With virtual learning, come Thursday we all have big emotions, are tired and are ready to relax during the weekend. And making dinner is the last thing I feel like doing at the end of the week! So this week I’m making two big dinners that we can stretch and will give us lots of leftovers and easy nights.
If you’re also in a bit of a dinner rut by the end of the week, I hope this easy dinner meal plan is helpful.
Here’s what we’re having for dinner this week:
Monday: Sausage Apple Sweet Potato Bake from Peanut Butter Fingers. This is one of my favorite easy fall one-pan dinners. It makes the house smell delicious too.

Taco Tuesday! Crockpot Salsa Verde Chicken Tacos. My favorite way to crockpot cook chicken is a mix of chicken breasts and thighs, a jar of clean salsa verde and cooking on low for a few hours until the chicken is tender. We’ll top our tacos with plain Greek yogurt (instead of sour cream), tomatoes, sliced avocado and a sprinkle of cheese.

Wednesday: Leftovers: Burrito Bowls. We’ll have leftover salsa verde chicken with brown jasmine rice and black beans in a burrito bowl. I love adding some lettuce and topping it with plain Greek yogurt (instead of sour cream) and sliced avocado.
Thursday: Cheesy Enchilada Rice Skillet from Damn Delicious over baked sweet potatoes. My favorite way to bake sweet potatoes is this way from Live Simply. They turn out perfect.

Friday: Leftovers or takeout. By Friday, I’m done with the week so I need something super easy and mindless for dinner. 🙂
Saturday: TBD.
Sunday: Soup Sunday! Lightened Up Cheddar Cauliflower Broccoli Soup from Ambitious Kitchen. This is a really delicious veggie-filled soup. And I love that it’s slightly healthier but just as tasty.
