I can’t believe it’s going to be October. We’re in our family’s busy celebration season—birthdays, anniversary, holidays. This coming weekend, Alex and I celebrate 11 years married. So we’re going to celebrate that this weekend!
Here’s what we planning for dinners this week:
Monday: Sheet-Pan Baked Feta with Broccolini & Tomatoes from Yasmin Fahr served over couscous. This looks so so good I can’t wait to try it.

Tuesday: Fajitas! Alex loves fajitas, the girls and I do too, so we eat them a lot. We will either do chicken or black bean fajitas. Topped with plain Greek yogurt, tomato and avocado. These are so quick to make. We don’t follow a recipe but here’s a really easy fajita recipe from Recipe Runner.

Wednesday: Teriyaki Salmon Bowls. Brown rice (here’s my favorite way to cook brown rice), edamame, teriyaki salmon, avocado and roasted sweet potatoes. Here’s a simple recipe from My Gluten Free Guide.

Thursday: Pesto Shakshuka from Bob’s Red Mill. An easy, filling and really good dinner with white beans, pesto, kale or spinach and eggs on top.

Friday: Pizza on the grill. We like using Trader Joe’s pizza dough and their frozen cauliflower crust, and mix up the toppings. We love trying new toppings, like broccoli, zucchini, goat cheese. A few favorites are:
- marinara, olives and organic white cheddar for the girls
- pesto, sun-dried tomatoes, artichoke, organic white cheddar
- marinara, mushrooms, zucchini, spinach, bell pepper, organic white cheddar or fresh mozzarella pieces
- pesto, tomatoes, mushrooms, goat cheese

Saturday: Our 11-year wedding anniversary! So we’re going to get takeout.
Sunday: TBD. If it’s cool enough we’ll do soup. Alex asked if we could hold off on soups until it’s cooler than 80 degrees here. ok … 🙂
