
As Christmas gets closer and we’re enjoying more treats, I want to fuel my body (any my family’s) with dinners full of real, whole, colorful foods. So this week I’m focusing on that: colorful dinners. That way, I know my body is getting what it needs, while I’m also enjoying treats I look forward to this time of year.
If you’re feeling the same and want some inspiration for some healthy colorful dinners pre-Christmas, here are some ideas!
Here’s what we’re having for dinners this week:
Roasted Sweet Potato Black Bean Quinoa Salad from Crunchy Creamy Sweet. Doesn’t this salad look delicious? Corn, sweet potato, black beans, lime, cilantro. So many delicious flavors.

Coconut Veggie Curry over Brown Jasmine Rice. This is such an easy 5-ingredient dinner. We love this one! Especially with warmed naan on the side.

Sausage- & Apple-Stuffed Acorn Squash from Cherished Bliss. The flavors in this—mmmm.

Easy Fall Salad with apple, sweet potato, beets, avocado and goat cheese. The flavors in this salad are so so good!

Creamy Rosemary Polenta with Roasted Veggies from Mountain Mama Cooks. This is such a delicious dinner I love when the weather gets colder. I like to use beets instead of radishes; and instead of using the branded maple butter like the recipe calls for, I use 4 tablespoons butter + 2 tablespoons pure maple syrup for roasting the veggies.
