Dinnertime in our house usually looks like one of two ways:
We’re home and we’re at the witching hour, when my girls get really impatient. And whiny. And loud. And hungry. And they start bickering with each other. It seems to all start just as I start making dinner.
We’re at some kind of sports practice or school event or doing something. We get home right around or after dinner time and the girls are tired. And hungry. And whiny. So Alex and I usually divide and conquer. I scramble to get dinner ready while Alex gets the girls showered and in pjs.
Either way, it’s usually pretty chaotic in our house at dinner time. (Unless I put on a show and let the girls zone out for half an hour 🙂 )

So, quick and simple dinners are non-negotiables. But I also want them to be full of real, whole ingredients and delicious too. So, over the years I’ve found some go-to recipes that are: Quick and simple and healthy and delicious. We have 1-2 of these recipes every week. They have become my lifesavers!
These are great for any night really, but especially great for nights when you get home late from sports practice or work or have something going on that leaves you short on time to make dinner so you need something quick and easy but also want it to be delicious and healthy.
