These are delicious and they include some of my favorite Trader Joe’s finds, like their Frozen Sweet Potato Frites, Cauliflower Pizza Crust, Thai Vegetable Gyozas, canned Coconut Milk, Brown Jasmine Rice, Organic Coconut Aminos, and more.

1. Loaded Sweet Potato Fries
This is one of my favorite dinners (one of my kids’ favorites too!). It’s delicious and pretty hands off, which is always a plus. And it uses a few of my favorite Trader Joe’s finds: Frozen Sweet Potato Frites, Shredded Unexpected Cheddar Cheese and Frozen Sweet Corn Kernels. You can also tweak the toppings based on family favorites. Yum!
2. Veggie Pesto Cauliflower Pizza
This is another dinner that’s easy to customize with your favorite pizza toppings. I love using Trader Joe’s Cauliflower Pizza Crust with their Vegan Kale Cashew Pesto and top it with seasonal veggies. It’s perfect for Friday night pizza nights!
3. Veggie Curry Over Brown Jasmine Rice
One of my favorite TJ’s staples is their canned Coconut Milk. It’s guar-gum free and is such a great pantry staple for creating quick dinners. Brown Jasmine Rice is another staple too. This curry is good, filling (it uses TJ’s Teeny Tiny Potatoes) and so simple. It’s a weekly dinner in our house, especially during the fall and winter months.
4. Cauliflower Gnocchi Veggie Tray Dinners
If you haven’t tried Trader Joe’s Cauliflower Gnocchi yet, I definitely recommend giving it a try! But don’t follow the directions on the bag … I’ve found that leads to a gooey mess of cauliflower gnocchi! This is a tray dinner, so less mess and it’s so simple to make. Perfect for a busy weeknight.
5. Veggie Gyozas Over Coconut Jasmine Rice
This dinner uses Trader Joe’s Organic Coconut Aminos, Thai Vegetable Gyozas and Stir Fry Vegetables — all such good staples to keep in your freezer and pantry. My girls love this dinner too, especially the coconut jasmine rice and the gyozas. 🙂
